THE MEANING OF MAN'S MEDDLING (OR HOW WE TOOK SOMETHING HEALTHFUL AND MADE IT FATTENING): WHITE BREAD AND ROASTED NUTS
Food, that wondrous substance that gives up its life to create ours, has inherent within itself all those things that it needs to be digested efficiently in our bodies. Then man came along and started tampering with food to give it more appeal and to make it last longer. Consider:
WHITE BREAD When man took the grain out of the grain. White bread is supposedly prettier and looks cleaner than brown bread. To achieve this beautiful product, man began with the grain and took out the bran (the fiber and the cellulose) and the germ (the B vitamins), and he then bleached the flour, sapping it of its remaining nutrients.
Eventually, aware of his folly, he did go to the trouble of putting some nutrients back in. Unfortunately, however, nature cannot be duplicated. It is only when foods are in their natural and proper balance that they work for your body, not against it.
ROASTED NUTS The chief digestive ingredient, lecithin, is roasted right out of the little guys. Heat destroys lecithin.
